Joe still needs work on it, but he blocks my Jin mix-up almost as much as Luna.

That was another thing, before I introduced him to you, I was stressing for him to play Lambda, because he blocked so well with her, he was more patient than any other new player I faced.

I still think he should rock Bang for a bit longer. Lambda would be a good idea because he has a grasp on defense, but her health doesn't allow for too many slip-ups. Bang gives him another chance (goes from 3 fuck-ups to possibly 4) while still having limited options on defense outside of blocking. He'd have an easier time learning how to be offensive, especially when Bang has a decent number of approaching methods and oki set-ups (where Lambda's combos tend to be more situational? that might just be me, though).
