thats how unblockables usually work, you can switch blocking anytime, but being able to tell what to block first and switch blocking fast enough is the main problem in an unblockable setup mainly when people mess up unblockables is when they mistime one or both of the moves, but it can still catch the other person because they didnt block the first move correctly or switch blocking in time also seeing and physically switching blocking in 1 frame is quite possibly impossible
