Ok, first of all, don't get scared of his 360/720. Yes, you should know it's there and you should bait it, but that shouldn't make you get scared of him. Use your 6B as a bait (not all the time though, Tager can collider you during the 6B animation). As long as your block string is tight, he can't do anything about it. Be on the lookout for the Tager IB'ing, since this is your cue to bait or jump away > j.C.
J.C is a very good tool to keep him at bay, since Tager doesn't really have an answer to it (unless you're too close).
Do not spam projectiles because he can sledge through them (although you can use this as a bait sometimes).
Also note that Tager is one of the characters you can do 3C > 236D on. This allows you to do jump > high / low / throw / bait 360/720 mixup.
As in, do 3C > 236D, do a running jump forward, then one of the following: airdash forward > j.B (for air-high mixup)> j.2C > ground blockstring, land > 2B (for low mixup) > ground blockstring, land > 6A (ground high mixup), or land > throw. The airdash mixup is probably the safest one, since Tager can't 360 / 720 you. He can backdash though, so be careful. It's all about educating him to not spam these things.
So as you can see, there's a lot of stuff Jin can do against Tager ^_^
